WINEMAKING
The 2024 growing season was marked by above-average temperatures in autumn and winter, with irregular rainfall throughout the cold months, followed by an exceptionally rainy March that helped restore soil moisture. The warm summer accelerated ripening, resulting in more concentrated berries and a relatively early harvest.
To preserve the freshness and aromatic precision of the rosé, the grapes were hand-harvested in early September, selectively, ensuring the ideal maturity point of the native Alvarelhão and Castelão varieties.
The grapes were quickly transported to the winery in 20 kg boxes to maintain berry integrity. Reception was followed by destemming, a brief skin maceration, and gentle pneumatic pressing of whole clusters, allowing the extraction of a delicate, clean must with high aromatic purity. The must then underwent a cold static settling for 48 hours, achieving natural clarification before fermentation began.
Fermentation took place in stainless steel tanks at low temperature to preserve the wild, aromatic profile and the varietal expression of the grapes. No malolactic fermentation occurred, maintaining the wine’s acidity and vibrancy. After fermentation, Dízimos Rosé 2024 benefited from extended ageing on fine lees, contributing to greater elegance, roundness, and texture. The result is a dry, serious, and gastronomically versatile rosé.
No animal-derived products were used during vinification.
TASTING NOTES
Crystal-pink colour, with exotic wild aromas combining berries, blueberries, and redcurrants. Lively palate, rounded and citrus-driven.
GASTRONOMIC SUGGESTION
Fresh, citrusy, and expressive, it pairs beautifully with shellfish, grilled fish, composed salads, and light Asian cuisine.
Its dryness and balanced acidity also make it an excellent choice for white meats such as grilled chicken or turkey, as well as tender cuts of pork. Versatile and elegant, it complements a wide range of dishes and shared moments.
