About the Wine
WINEMAKING
The 2021 wine year was quite atypical, with higher than average temperatures and much lower rainfall, resulting in hot, dry weather.
The grapes were harvested in the first days of September, although they were already ripe, with the aim of preserving the freshness and elegance of the wines. The harvest was selective in order to take advantage of each plot’s ideal ripeness.
The grapes were harvested by hand and transported extremely quickly to the winery. The must was extracted by pressing the whole bunch, very slowly and gently, in order to obtain cleaner, purer juices. Static decanting was carried out at a low temperature over 48 hours to allow for natural sedimentation and cleaning of the juices before fermentation, with only the natural action of cold. The Avesso and Arinto musts were co-fermented in stainless steel vats for around 15 days and then aged on fine lees (sur-lies) for 10 months.
TASTING NOTES
Open yellow colour and crystalline appearance. The profile is fresh, with citrus notes and strong aromas of orchard fruit, emphasising a hint of minerality. The palate is enveloping, structured, fresh and mineral, with an intense, dry end.
GASTRONOMIC SUGGESTION
Goes well with boiled, roasted or grilled fish, shellfish, seafood, fatty cheeses, foie gras, salads and Asian cuisine.
